The age-protected guys raised a huge stink...

I can't remember if I was one raising a stink or not, but I would guess so. The problem with what you proposed Eric, is that it sort-of retains the same division names and their implied baggage that go along with them. Change it to color division codes, or something else dissimilar to the existing Pro/Am division names, and then us age-protected folks probably wouldn't see it as stepping up or down. It would all be new to everyone.

I would like to play in a (relatively) large division with people at/near my skill level. I had a great time playing with Christian and Cory last weekend (as well as the two open guys that got stuck on our card), but I miss playing in a larger field.
I don't think I care about division names, but I do agree with Larry about the cash/merch distinction. If my level is Intermediate, then I'm happy playing with other Intermediate players, but I don't want to play for merchandise, and I don't think my wife wants me bringing home any more discs either.

Maybe players should have to declare at sign-up time whether they are cash or plastic.

The problem with that is if it's a non-PDGA event, why would anyone opt for plastic? They can take cash and retain their Am status. And if you want to do something like this as a fundraiser, you don't want to make it a PDGA event. Too much overhead.
